‘Nduja Sticks

‘Nduja Sticks Recipe

Makes 30 sticks or more

Ingredients

  • 2 sheets bought all butter puff pastry, ready rolled
  • 150g ‘Nduja
  • 50g mature Cheddar cheese, finely grated
  • 1 egg yolk, lightly beaten
  • 1 tsp poppy seeds
  • 1 tsp chilli flakes
  • 1 tsp dried marjoram
  • 1 pinch of sea salt

Method

  1. Pre-heat the oven to 180°C fan (350°F), Gas Mark 4
  2. Take one sheet of the puff pastry and lay flat. Spread the ‘Nduja sausage thinly on top and sprinkle over about half of the cheese. Place the remaining sheet of puff pastry on top and, using a rolling pin, lightly roll to slightly spread out the pastry and to ensure the two sheets stick together.
  3. Brush egg yolk over the top layer of pastry, sprinkle with poppy seeds, chilli flakes, marjoram and a further quarter of the cheese. Cut the pastry into thin strips and twist each strip then place on a baking tray lined with grease-proof paper.
  4. Bake in the oven for between 8-10 minutes or until golden brown and about half way through cooking, sprinkle over the remainder of the grated cheese. Leave to cool on a wire cake tray before serving.
