Chorizo, Pepper & Mozzarella Pizza


Mark ‘s “Cheat Pizza” has bags of flavour, is easy to cook and ready in no time…

Chorizo, Pepper & Mozzarella Pizza Recipe

Serves 2 | Preparation 15 minutes | Cook 15 minutes

Mark uses flatbreads but you could use a pizza base, either shop bought or if you’re up for it - own-made!


  • 2 flatbreads
  • 4 tbsp of tomato purée
  • 1 red onion chopped
  • 1 garlic clove chopped
  • 2 sliced tomatoes
  • 3 sliced gherkins
  • 1 block of mozzarella cheese
  • 1 red pepper sliced
  • 1 tomato cored and diced
  • ½ cup of chopped chorizo
  • 1 tsp of oregano
  • Salt & pepper


  1. Preheat the oven to 180ºC.
  2. Place a flatbread on a baking sheet and spread over two tablespoons of tomato purée.
  3. Add the second bread then add the remainder of the tomato purée.
  4. Top with onion, garlic and tomato slices.
  5. Then add the mozzarella, diced tomato and the gherkins.
  6. Place the red peppers on top with the chorizo.
  7. Season and sprinkle with the oregano. Cook in the oven for 15-20 minutes until the cheese has melted.


Slice and serve.
